<p><strong>About the Author</strong><br />
Carol Trewin is Food Editor of the Western Morning News, was editor of Radio 4&#8242;s Farming Today and has worked for BBC Radio 4&#8242;s Food Programme, Woman&#8217;s Hour and the BBC World Service. Other farming, food and environmental programmes that she has produced include On Your Farm, Costing the Earth, Walston Goes Walkabout, and Over the Counter.</p>
<p>She was Farming Editor of the Western Morning News, and later joined the regional food group Taste of the West, to set up and run a GBP3 million food and drink project in Cornwall. She writes on farming, food and the countryside for many publications, including Food Illustrated, The Field, British Farmer and Grower, Inside Cornwall, food and Devon Today.</p>
<p>In 1999 she was elected an Associate of the Royal Agricultural Societies. Carol is author of Gourmet Cornwall (Alison Hodge, 2005). Adam Woolfitt has been a photographer most of his life, and contributed to the National Geographic and other leading magazines for 30 years. He writes on digital photography for the British Journal of Photography, Image Magazine, and Photo District News in New York. He was Chairman of, and on the Council of, the Association of Photographers, and is an Honorary Fellow of the British Institute of Professional Photographers. Hitherto, the contents of Rick Stein&#8217;s Seafood have been accessible only to students of the Padstow Seafood School, as course notes in a loose-leaf binder. Now the teachings of this remarkable establishment are made available to a wider public, in amply illustrated form at once lucid and sumptuous. This is both a technical manual and an extraordinarily comprehensive collection of recipes; and the tone throughout is correspondingly sober and professional. The first hundred pages cover technique&#8211;not just cooking seafood, but buying and preparing it, too&#8211;in great thoroughness, from scaling and gutting fish, skinning eels (requiring a butcher&#8217;s hook and a pair of pliers, if you can face it), through deep-frying, poaching, steaming, grilling, to opening oysters and tenderising octopus (not, as you might suppose, by bashing it repeatedly against a rock, but in the oven).</p>

<p>The recipes group fish not just by species, but by shape: large fleshy fish, flat fish, small round fish, crustaceans and so on&#8211;a sensible approach, since within these categories the fish are to an extent interchangeable. Austerely, the recipes are neither prefaced with an introductory blurb nor sourced, but they are of the most distinguished provenance. Salmon en Croute with Currants and Ginger, for example is a famous George Perry-Smith recipe; the neighbouring Escalopes of Salmon with Sorrel Sauce derives from the Triosgros brother; while the interestingly strange Pernod and olive oil dressing with which Stein anoints grilled Dublin Bay prawns comes from Alexandre Dumas by way of Elizabeth David (it also includes mustard, soy sauce and tarragon). This is not to accuse Stein of plagiarism: he has simply collected the very finest seafood recipes and filtered everything through his characteristic simplicity and emphasis on freshness, quality and flavour. The result is a book of quite exceptional quality and usefulness. One hesitates to use the word bible, but if seafood can have one, this may be it. &#8211;Robin Davidson</p>

The recipe section includes all the essential basic recipes, such as stocks, sauces, batters etc. Useful cross references link all sections.</p>

<p>Ordinarily the word &#8220;lifestyle&#8221; is more likely to be applied to slender magazine articles puffing lofts full of Eames furniture rather than books about smallholdings in Dorset. The River Cottage Cookbook, however, is a hefty 450 pages of pure, gumbooted rural lifestyle; and one could not wish it shorter. Cook, broadcaster and food-writer-at-large Hugh Fearnley-Whittingstall has been ensconced at River Cottage for a number of years, cultivating his vegetable garden, raising chickens, pigs and even cattle for his table and taking occasional potshots at the local wildlife. His achievements have been chronicled on television; now they appear between hard covers.</p>
<p>Although it calls itself a cookbook and does contain a large number of fine recipes, the book&#8217;s scope is much broader. Really, this is more like one of those &#8220;Enquire Within on Everything&#8221; volumes 19th-century settlers used to take to the outback with them, full of instructions for mixing whitewash, worming dogs and making a bag pudding. Starting with vegetables, proceeding to livestock and fish (River Cottage does indeed have a river and is only five miles from the sea) and concluding with the wild food, floral and faunal, of the hedgerow, Hugh Fearnley-Whittingstall explains how he grows, gathers, kills and cooks his own food.</p>
<p>There is a lot of information here, and a lot of hard reality, too: he is very clear and forthright about the place of death in this kind of life. But then this is a very clear and forthright book overall, a very engaging and really quite inspirational manual of how to live the country life so many of us dream about. It&#8217;s well-illustrated, too, with Simon Wheeler&#8217;s fine photographs of Hugh at work chasing chickens, skinning eels, carrying piglets and so on. The food in the River Cottage kitchen looks wonderful, too, though the photo of a cod-head glaring resentfully from under a beehive of parsley in a stock pot carries many more resonances than it is possible to summarise here. &#8211;Robin Davidson &#8211;This text refers to an out of print or unavailable edition of this title.</p>

<p>Great pictures and a great book for information for any one starting out in poultry.</p>
<p>Gives you details of everything you need to know even plans to build you own coop. The lot is covered from breeding to health care to what your eggs should be like.</p>
<p>All the basics are there on care and feeding even what you need in your first aid kit. I will be recommending this book to all the people who buy chickens from me as a great start up book.</p>
